For those who admire the charm of old world espresso, Profitec introduces the Pro 800; a powerful lever-operated machine with all the advantages of modern technology. The Pro 800 features a mirror-finished stainless steel housing that hides a rock-solid one-piece frame and top-of-the-line components. Ever since we first received it, the Pro 800 has been a permanent fixture in our office, towering above the kitchen counter and pulling shot after shot. It’s seen a lot of use here. We all agree the lever is incredibly satisfying to pull, but the extra level of control over our espresso is what keeps us coming back. For a few moments every morning, we get to be old-time baristas.
Unique to machines like the Pro 800 is the ability to perform a true low-pressure pre-infusion, which tends to make softer, more full-bodied, or even sweeter shots. Pulling the lever fills the group, applying about 1-1.5 bar from the boiler and lightly soaking the coffee. By releasing the lever, a spring-loaded piston gradually builds pressure on your coffee, and then declines near the end of the extraction. This achieves a sort of pressure profiling that works perfectly to unlock the different flavors in specialty coffee.
Inside the Pro 800, the impressive 3.5 liter insulated copper boiler is the perfect choice to handle the stress from a lever operated machine and allows you to brew with no recovery time between shots. This boiler shows impeccable temperature stability in tandem with the 17 pound group head. For added control and durability, the Pro 800 features a Gicar PID artfully hidden behind the drip tray to preserve the machine’s classic aesthetic. Our technicians were specifically impressed with the internal layout of the Pro 800, which Profitec has kept tidy and beautifully organized. The massive boiler is horizontally mounted over the copper and braided stainless steel plumbing, and backed by a large, vertical counterweight to keep the machine steady when pulling a shot.
The Pro 800 is one of the quieter machines we’ve tested, as the pump can only be heard when refilling the boiler through the reservoir. To eliminate noise entirely, the Pro 800 can be plumbed in directly, in which case, water line pressure will fill the boiler in place of the pump. With the Pro 800 plumbed in, you’ll never hear the pump again.
Standing at a height of about 29 inches tall to the top of the lever, the Pro 800 is best for those with plenty of space to proudly display the machine.
